A super-rewarding slow cooker recipe:
Pulled Pork:
- 2-3 lbs of Pork Roast (I looked for the cheapest piece of meat in the grocery)
- 1/3 bottle red wine
- 1 (18 ounce) bottle barbecue sauce
- Hamburger Buns
- (Optional: cole slaw recipe below)
- Place the pork in a slow cooker; pour the wine over the meat. Cover meat with about 1/3 jar BBQ sauce. Cover and cook on low until well cooked and the pork shreds easily, about 8 hours. Pour rest of BBQ sauce on meat as shredded.)
- Assemble sandwiches with meat and cole slaw.
Cole Slaw:
- 1/2 head of cabbage (diced)
- 3 carrots (shredded)
- 1/2 Cup Mayonnaise
- 1/4 cup sugar
- 1/4 cup apple cider vinegar
- (optional: dill and parsley, salt/ pepper to taste)
- Mix Mayonnaise, sugar, and vinegar.
- Mix with cabbage/ carrots. Let marinate in refrigerator for about and hour.
