Southern Comfort-- Pulled Pork and Cole Slaw

A super-rewarding slow cooker recipe:

Pulled Pork:

  • 2-3 lbs of Pork Roast (I looked for the cheapest piece of meat in the grocery)

  • 1/3 bottle red wine

  • 1 (18 ounce) bottle  barbecue sauce

  • Hamburger Buns

  • (Optional: cole slaw recipe below)

  1. Place the pork  in a slow cooker; pour the wine over the meat. Cover meat with about 1/3 jar BBQ sauce. Cover and cook on low until well cooked and the pork shreds easily, about 8 hours. Pour rest of BBQ sauce on meat as shredded.)

  2. Assemble sandwiches with meat and cole slaw.

Cole Slaw:

  • 1/2 head of cabbage (diced)

  • 3 carrots (shredded)

  • 1/2 Cup Mayonnaise

  • 1/4 cup sugar

  • 1/4 cup apple cider vinegar

  • (optional: dill and parsley, salt/ pepper to taste)

  1. Mix Mayonnaise, sugar, and vinegar.

  2. Mix with cabbage/ carrots.  Let marinate in refrigerator for about and hour.
